About

Pancake Hollow Permaculture is a small-scale farming operation on five acres overlooking Illinois Mountain and Pancake Hollow Brook in Highland, New York. The property includes a varied landscape of cleared and wooded areas as well as seasonal wetlands, offering unique opportunities and challenges for a permaculture system.

The farm is in its very early stages, being founded in 2025. Prior to this, I operated a sixteen-acre permaculture operation in rural North Carolina. With one pig, seventeen chickens, and two cats coming on the trip, we moved the bare bones of the farm to New York and started over!

…What is permaculture? I follow the core permaculture principles of “earth care, people care, and fair share” to build a sustainable, regenerative, and resilient system that works with natural ecosystems and supports community sufficiency.
